Classic Chocolate Mousse

Ingredients
- 3 eggs, separated
- 2 tsp vanilla extract
- 3 tbsp strong, cold coffee
- 1⁄2 cup chocolate – your choice, melted
- 1 tbsp sugar
- 1 cup whipping cream, whipped to soft peaks
Preparation
- Whisk egg yolks with vanilla extract and coffee. Stir into warm chocolate and set aside.
- Create meringue by beating egg whites with sugar until soft peaks form.
- Using a Corner Spatula, quickly fold whipped cream into chocolate mixture.
- Incorporate meringue into chocolate mixture. Pour into individual serving glasses or a large dessert bowl. Chill for 3 hours before serving.
