Chocolate Cupcakes for St. Patrick's

Ingredients

  • 1 cup flour
  • 12 cup cocoa powder
  • 34 tsp baking soda
  • 34 tsp baking powder
  • 14 tsp salt
  • 34 cup sugar
  • 13 cup vegetable oil
  • 1 egg
  • 1 cup buttermilk
  • 1 tsp vanilla
  • 12 cup boiling water
  • 2 tbsp softened butter
  • 2 12 cups icing sugar
  • 1 egg
  • 1 tsp vanilla
  • 2 tbsp light cream

Preparation

  • Preheat oven to 350° F (175° C).
  • Lightly spray Perfect Portion Muffin Pan with vegetable oil or line with paper cups.
  • Whisk together first 5 ingredients.
  • In a small bowl, whisk together sugar, oil, egg, buttermilk and vanilla.
  • Combine wet and dry ingredients. Using a Corner Spatula, stir in boiling water until batter is smooth.
  • Scoop into Muffin Pan and bake for 18–20 minutes.
  • Cream butter with icing sugar. Beat in egg and vanilla, and cream to make spreadable.
