Chipotle Veggie Burger

Finally, a plant-based burger pattie that you’ll be proud to serve to your vegan—and even non-vegan—friends! It’s made without soy, gluten, dairy, or nuts, and it’s a real protein powerhouse, boasting 18 g of protein and 5 g of fibre. It’s got smoky notes, with a touch of chipotle that brings just the right amount of heat. It’s delicious, nutritious, and totally plant-powered!

Ingredients

  • 1 cup cubed sweet potatoes
  • 1 pkg Chipotle Veggie Burger Mix
  • 12 cup boiling water
  • 3 tbsp oil, divided
  • 4 burger buns

Preparation

  • Place sweet potato cubes in Rectangular Steamer. Cover; microwave on high 3–4 min, or until fork tender.
  • In a food processor, combine mix, boiling water, and 2 tbsp oil. Pulse to moisten. Add sweet potato and pulse until well combined; mixture should still be a bit chunky. Form into 4 patties.
  • Heat remaining 1 tbsp oil in a frying pan over medium heat. Cook patties 3–5 min per side, or until golden.
  • Split and toast buns. Tuck patties into buns with additional toppings, if desired.
