Chilled Minted Pea Soup

Ingredients

  • 1 tbsp dried mint, or 3 tbsp fresh mint
  • 5 cups Nourish or Vegetable Broth
  • 1 12 tsp Nourish Broth Mix
  • 1 cup boiling water
  • 1 12 tsp Vegetable Broth Mix
  • 1 cup boiling water
  • 3 tbsp 3 Onion Dip Mix
  • 1 lb (450 g) frozen green peas
  • Sea Salt, to taste
  • Black Pepper, to taste
  • 1 cup sour cream – optional

Preparation

  • Combine first 4 ingredients in a Multipurpose Pot - 8 cup over medium-high heat.
  • Reduce heat and simmer for 20 minutes. Cool slightly.
  • Purée in blender or food processor until smooth.
  • Season to taste with Salt and Pepper. Serve chilled.
