Cheesy Artichoke Squares

Ingredients

  • 6 eggs
  • 2 tbsp Spinach Dip Mix
  • 14 cup dry breadcrumbs
  • 1 small onion, diced
  • 1 can (14 oz/398 ml) artichoke hearts, drained and chopped
  • 1 cup grated low-fat cheddar cheese
  • 2 tbsp grated Parmesan cheese

Preparation

  • Preheat oven to 325° F (165° C).
  • Lightly brush Round Cake Pan with oil.
  • Whisk eggs with dip mix.
  • Stir in breadcrumbs, onion, artichokes and cheddar.
  • Spoon into prepared pan. Sprinkle with Parmesan.
  • Bake for 18 minutes, or until firm. Serve hot or at room temperature.
