Chai Tea Meringues

These light, airy meringues are melt-in-your-mouth delicious.

Ingredients

  • 12 cup water
  • 2 tbsp chai tea
  • 3 egg whites
  • 1 cup sugar
  • 14 tsp cream of tartar

Preparation

  • Preheat oven to 250° F (120° C).
  • In Multipurpose Pot - 8 cup, bring water and chai tea to a boil. Simmer until liquid is reduced to 1 tbsp. Strain, reserving liquid, and cool.
  • In a medium bowl, beat egg whites with electric mixer on low speed for approximately 2–3 minutes, until foamy. Mix on high speed until stiff peaks form.
  • Slowly add sugar while continuing to beat on high. Add cream of tartar. When thoroughly mixed, egg whites will take on a glossy sheen. Add steeped tea and beat just to incorporate.
  • Drop by spoonfuls or pipe mixture into small mounds on a Sheet Pan lined with a Sheet Pan Liner. Bake for 90 minutes. Turn off oven and leave to cool, keeping the oven door closed.
