Cauliflower Soup

Cauliflower is an excellent source of vitamin C and enjoying it as a soup is an excellent way to amp up your daily serving of veggies!

Ingredients

  • 1 medium cauliflower, coarsely chopped
  • 5 cups Nourish Broth or Vegetable Broth
  • 1 12 tsp Nourish Broth Mix
  • 1 cup boiling water
  • 1 12 tsp Vegetable Broth Mix
  • 1 cup boiling water
  • 12 - 1 cup milk, cream, or coconut milk, optional
  • 1 tsp Minced Garlic or SPG Seasoning
  • 12 cup Paris Bistro Sauce or Pesto Sauce, or sauce of your choice
  • 2 tbsp Pesto Sauce Mix
  • 2 tbsp water
  • 2 tbsp pine nuts or pistachio nuts, optional
  • 1 tbsp grated Parmesan cheese
  • 14 cup olive oil
  • 2 tbsp Paris Bistro Finishing Sauce Mix, shake jar before use
  • 14 cup water
  • 2 tbsp olive oil

Preparation

  • In a Multipurpose Pot over medium heat, cook cauliflower in broth until cauliflower is tender, approximately 10–15 minutes.
  • Add milk (if using) and garlic. Purée until smooth.
  • Pour into bowls, and then drizzle each bowl with 1–2 tbsp prepared sauce.
