Butter Chicken Nachos

A fusion dish that combines rich & creamy butter chicken with crunchy tortilla chips––a delicious way to enjoy two family favourites. This finger-licking meal is sure to be a hit on game night!

Ingredients

  • 1 bag (11 oz/340 g) tortilla chips
  • 1 recipe prepared Butter Chicken, warmed
  • 1 large onion
  • 1 tbsp butter
  • 1 pkg Butter Chicken Seasoning
  • 1 can (14 oz/398 ml) light coconut milk
  • 12 cup crushed tomatoes
  • 2 lbs (900 g) boneless, skinless chicken breasts, cubed
  • 12 cup 2% plain Greek yogurt
  • 34 cup grated mozzarella cheese
  • 12 cup prepared Roasted Garlic Aioli
  • 1 tbsp Roasted Garlic Aioli Mix
  • 1 cup light mayonnaise
  • 1 tsp lemon juice, optional
  • 2 tbsp milk or water, optional
  • 2 cups baby spinach

Preparation

  • Preheat oven to 375° F. Arrange chips on Sheet Pan lined with a Sheet Pan Liner.
  • Layer chips with butter chicken. Top with cheese.
  • Bake until cheese is melted, about 8–10 min.
  • Meanwhile, combine aioli with milk to thin, if desired.
  • Top warm nachos with spinach; drizzle with aioli.
