Black Bean & Corn Salsa

Use as a salsa to top nachos, dunk chips, or fill tacos! Be sodium savvy– when choosing canned black beans, opt for low-sodium and give them a quick rinse after you drain them. Rinsing helps remove even more of the sodium.

Ingredients

  • 2 cups frozen corn kernels
  • 2 cups canned black beans
  • 2 tbsp olive oil
  • 2 tbsp Poco Picante Salsa, prepared
  • lime, optional
  • cilantro, optional

Preparation

  • In a Rectangular Steamer, microwave corn on high, with lid on for 2 minutes.
  • Combine corn with all other ingredients. Add a lively splash of lime juice and cilantro if desired. Serve warm or chilled.
