Big Batch Bali Chicken

Cook once, eat twice! This makes enough cooked chicken for tomorrow’s Bali Chicken Quesadillas.

Ingredients

  • 6 tbsp Bali Glow Dry Glaze
  • 3 tbsp olive oil
  • 2 14 lbs (1 kg) boneless chicken breast
  • juice of one lime, optional

Preparation

  • Combine Bali Glow Dry Glaze and oil in a resealable bag, add chicken and coat well. Let marinate in fridge for at least 10 minutes, and up to 24 hours.
  • Preheat grill to medium, and cook chicken with lid closed, for approximately 6–8 minutes per side, until cooked through, and chicken has reached a Food Safe temperature of 165° F (74° C).
  • No barbecue? No problem! Lightly oil a fry pan with a basting brush. Cook chicken over medium-low heat for 5 minutes, turn over, and place in a pre-heated 350° F (175° C) oven and cook for another 10–15 minutes, until chicken, is cooked through.
  • Using 2-in-1 Citrus Press, squeeze lime over chicken and let rest for 5 minutes before serving.
