Beet Burger with Avocado Peach Salsa

Ingredients

  • 3 cups cooked or canned beets, cubed
  • 34 cup oats
  • 12 cup diced onion
  • 2 eggs
  • 2 tbsp Pesto Sauce Mix
  • Sea Salt, to taste
  • Black Pepper, to taste
  • 2 tbsp olive oil
  • buns
  • 1 recipe prepared Avocado Peach Salsa, optional
  • 2 peaches, diced
  • 1 avocado, diced
  • 2 tbsp Poco Picante Salsa Mix
  • splash of lime juice, optional
  • chopped cilantro, optional

Preparation

  • Combine first seven ingredients in a prep bowl and mix well.
  • Rest mixture for 30 minutes to allow oats to absorb liquids.
  • Form the mixture into four patties. Heat frying pan to medium, add oil, and pan-fry patties for approximately 5 minutes per side, until crisp on the outside and warmed through.
  • Serve on buns with Avocado Peach Salsa or your favourite toppings.
