Beautiful Barley Salad Bowl
Not just visually stunning, this salad features barley, a powerhouse of fiber, vitamins, and minerals to every delicious bite. With the added bonus of a quick & easy preparation, this vegetarian dish will have heads turning and tummies happily satisfied in no time.
Ingredients
- 4 cups mixed greens, finely chopped
- 2 cans (14 oz/398 ml) lentils
- 1 cup cooked pearl or pot barley
- 1 1⁄2 cups diced apple, peach, plum, or grapes
- 1⁄2 cup crumbled feta
- 1⁄4 cup pickled red onion, finely chopped
- 1⁄2 recipe prepared Greek Dressing or Balsamic Vinaigrette Dressing
- 2 tbsp Greek Dressing Mix
- 3⁄4 cup olive oil
- 1⁄4 cup red wine vinegar
- 2 tbsp Balsamic Vinaigrette Dressing Mix
- 3⁄4 cup olive oil
- 1⁄4 cup balsamic vinegar
- Sea Salt, to taste
- Black Pepper, to taste
- 1⁄3 cup toasted nuts, your choice, chopped
Preparation
- In a large bowl, combine greens, lentils, barley, apple, feta, and onion.
- Pour dressing over the salad and toss to combine
- Just before serving, top with nuts and topper, if desired.
