Not just visually stunning, this salad features barley, a powerhouse of fiber, vitamins, and minerals to every delicious bite. With the added bonus of a quick & easy preparation, this vegetarian dish will have heads turning and tummies happily satisfied in no time.

Ingredients

  • 4 cups mixed greens, finely chopped
  • 2 cans (14 oz/398 ml) lentils
  • 1 cup cooked pearl or pot barley
  • 1 12 cups diced apple, peach, plum, or grapes
  • 12 cup crumbled feta
  • 14 cup pickled red onion, finely chopped
  • 12 recipe prepared Greek Dressing or Balsamic Vinaigrette Dressing
  • 2 tbsp Greek Dressing Mix
  • 34 cup olive oil
  • 14 cup red wine vinegar
  • 2 tbsp Balsamic Vinaigrette Dressing Mix
  • 34 cup olive oil
  • 14 cup balsamic vinegar
  • Sea Salt, to taste
  • Black Pepper, to taste
  • 13 cup toasted nuts, your choice, chopped

Preparation

  • In a large bowl, combine greens, lentils, barley, apple, feta, and onion.
  • Pour dressing over the salad and toss to combine
  • Just before serving, top with nuts and topper, if desired.
