Awesome Salmon Tacos
Ingredients
- 1 cup grilled salmon, shredded
- 2 cups mixed shredded cabbage and carrot
- 1⁄4 cup Italian Dressing, prepared
- 2 tbsp Italian Dressing Mix
- 3⁄4 cup oil
- 1⁄4 cup white vinegar
- 4 small corn or whole-wheat tortillas or hard taco shells
- 1 cup Poco Picante Salsa, prepared
- 2 tbsp Poco Picante Salsa Mix
- 1 cup diced tomatoes
- 1 tsp lime juice, optional
- cilantro, optional
- 1 cup Guacamole, optional
- 2 ripe avocados
- 3 tbsp Guacamole Dip Mix
- lime juice, optional
Preparation
- Toss cabbage and carrots with Italian Dressing, then blend in salmon.
- Divide between tortillas, spooning mixture over right side of each. Top each with a spoonful of Poco Picante Salsa. Fold tortillas over and place on plates. Serve with remaining salsa on the side.
