Ancho Lime Steamer Rice

Rice is the perfect side dish to make in the microwave, using Epicure’s Multipurpose Steamer. Ready in 20 min, this is our take on Mexican rice. It has a beautiful red hue, a medium heat, and a little bit of tang! Perfect to accompany your favourite Tex-Mex mains.

Ingredients

  • 1 cup uncooked white rice
  • 2 cups + 2 tbsp water
  • 1 tbsp Ancho Lime Rub
  • 1 tbsp tomato paste

Preparation

  • In Round or Multipurpose Steamer, combine rice, water, rub, and tomato paste. Top with tray; microwave, uncovered, on high for 17–19 min, or until tender. Using a fork, stir to fluff.
