10-minute Lemony Chicken and Zucchini

Ingredients

  • 2 zucchini, thickly sliced
  • 1 lemon, thinly sliced
  • 4 (5 oz/142 g) boneless, skinless chicken breasts, sliced into strips
  • 2 tsp Lemon Dilly Dip Mix
  • 14 cup crumbled light feta
  • 1 recipe prepared El Greco Finishing Sauce, or sauce of your choice

Preparation

  • In a Multipurpose Steamer, spread out lemon slices and layer zucchini on top.
  • Rub chicken with Lemon Dilly Dip Mix and place on top of vegetables.
  • Cover and microwave on high for 6–8 minutes.
  • Top with feta and sauce.
